Wiltshire Horn lamb carcasses on hooks at the Brooks Meat Show Byarlea Wiltshire Horn Wether Lambs. First prize in Mount Barker Carcass Competition.

Wiltshire's are renowned for the quality of their meat, which is generally light in texture, fine grained and lean and tender with excellent flavour. The lamb carcasses are high yielding with consistent dressing percentages around 50%.

The quality of the meat is shown by results in carcase competitions where Wiltshire's have had the best dressing percentages, highest yield and largest eye muscle area. Byarlea stud has achieved good results in such competitions (pictured above).

We recently had 5 wether lambs killed at our local butcher at The Brook Meat Store in Crystal Brook. His comments on the carcasses were:

“Prime carcasses for the butcher. Good heavy 26kg dressed carcasses, good white fat coverage with meaty eye in loin. Great quality meat with nice markings, what every butcher wants for prime lamb meat.”
